With just a handful of ingredients – flour, butter, chopped pecans, sugar and a pinch of fleur de sel- you’ll enjoy a wonderful bonding experience while preparing them together as a family. Begin by mixing the softened butter and the sugar until you get a creamy consistency. Then add in the rest of the ingredients, mix until you reach a tender malleable dough.

Snowball cookies.

  • Prep time: 20 minutes
  • Cook time: 12 minutes
  • Serves: for 40 Cookies 10g each :

Ingredients :

  • 90 g pecan halves
  • 120 g unsalted butter, at room temperature
  • 65 g icing sugar, sifted, plus an extra 50g for coating
  • 1/2 tsp vanilla paste
  • 165 g all purpose flour
  • pinch of fleur de sel, you can use Maldon salt

Method :

  • 1)

    Preheat your oven to 150°C (300°F) fan. Spread the pecans out on a baking tray and toast them for 10 to 12 minutes, until they turn golden brown and release and smell nutty. Once done, let them cool.

    Transfer the cooled pecans to a food processor and pulse them to coarsely chop. Stop before they turn into a powder, as it’s important to retain that delightful crunch in the finished cookies.

    In the bowl of a stand mixer fitted with the paddle attachment (or you can do this by hand—it’s quite easy!), combine the butter and the sifted icing sugar. Mix on medium-high speed, scraping down the sides of the bowl with a spatula several times, until the mixture is pale and creamy. With the mixer on low speed, gradually add the remaining ingredients and continue mixing until everything is well incorporated, and there are no traces of flour.

    Pour the dough out onto a clean work surface and gently knead it for about 30 seconds. Form it into a ball, wrap it in plastic wrap, flatten it into a disk, and refrigerate for 30 minutes to firm up the dough.

    Increase the oven temperature to 165°C (330°F) fan. Line a baking tray with parchment paper or a silicone perforated baking mat.

    Roll the dough into small balls, about 10 grams each. Place them on the baking tray and bake for 10 to 12 minutes, turning the tray halfway through to ensure even baking. Keep an eye on them—the bottoms should be firm and lightly golden.

    Once done, remove the baking tray from the oven and let the cookies rest for 3 minutes before transferring them to a wire rack to cool completely.

    Once cooled, gently roll each cookie in sifted icing sugar, one by one. For an extra snowy look, use snow  sugar to maintain that beautiful powdered appearance.
