• Blueberry, almond & lemon cake – Ottolenghi

    06/07/20214passionfood

Few days ago my friend Assia asked me to participate to a challenge : “sublime tes fruits – sublime your fruits”. The idea behind was to highlight the summer fruits. So I decided to make my favorite cake : “blueberry, almond and lemon cake” from “simple” Ottolenghi’s cookbook. This cake is one of the best I’ve baked, it’s a wonderful cake. There is no surprise, it’s an Ottolenghi creation.  With blueberries in season, it’s the perfect time to make this delicious cake. It’s light, moist, with a bright lemon flavour and the bursting blueberry in every bite. It’s just addictive. The icing here is a must as it adds that intense zingy but sweet lemon flavour, which takes the cake…

  • Salmon loaf cake – Nicolas Bernardé

    23/06/20214passionfood

When I first got my hands on this amazing book “invitation d’un pâtissier voyageur” I naturally started to flip through it. When I came to this recipe “ saumon sauvage Canadian : wild canadian salmon”, I just had to stop. Not just because the picture of this cake is sublime – it’s also the case for all the pictures of this book from the first page to the last -. But because I love salmon in all its forms, and this recipe combines all the ingredients to make it the perfect loaf cake. It has fresh and smoked salmon, green olives, emmental cheese, spring onions and…

  • Lemon & olive oil cake – Christophe Bacquié.

    07/05/20214passionfood

It’s been a while since I made a cake. And today I’m sharing with you chef “Christophe Bacquié”recipe, three times Michelin starred and having obtained the title of “MOF : meilleur ouvrier de France (Best Craftsman in France ) in 2004”, who was kind enough to share it with his followers during the first lockdown. I think many people must already know it, it’s the famous “lemon & olive oil cake”. If you ever don’t make it yet, don’t hesitate for a second. Since I made it in March 2020, I have stopped all pursuit of the perfect lemon cake. This ultra simple cake with Mediterranean flavors, is light, moist and…

  • Chocolate cake with fleur de sel by Christophe Michalak

    13/11/20204passionfood

Here is a cake for choco-addicts.  In principle (I mean in principle), I’m not a fan of chocolate cake, but this one I can say it made me change my mind.  Besides, this is the second time that I have done it.  And it’s still so good.  The recipe for this “All chocolate” cake is that of chef Christophe Michalak, from his book “the ultimate cake book”.  He’s a chef that I admire a lot, I have never been disappointed with his recipes.  I had already made his gianduja & orange blossom cake which was magnificent.  And today this fabulous cake that I’m sharing with you.  This cake is composed…

    29/08/20204passionfood

Today I share with you the “infinitely hazelnut” cake from the great Chef Pierre Hermé.  Impossible to imagine my blog without a recipe for the “king of the macaron” or the “Picasso of pastry” as he has been nicknamed by the magazine “Vogue”. This “infinitely hazelnut” cake is infinitely tasty, infinitely irresistible, infinitely amazing … .. This recipe was shared by Charles and Ava, it’s composed of a moist cake with cubes of praline – feuilletine, and hazelnuts which bring the crunchiness, soaked in syrup flavored with hazelnut, add to that this hazelnut cream on top  composed of milk chocolate, hazelnut paste and hazelnut praliné, all coated with Dulcey chocolate with a mild…

  • Cod cakes in tomato sauce by Ottolenghi & Sami Tamimi from « Jérusalem ».

    22/08/20204passionfood

Everyone knows the benefits of fish and I try to consume it as often as possible, except that I must say that sometimes it is very difficult for me to find original recipes to change a little of what I’m used to do, and especially to convince my children to eat it.  So I suggest you to try this recipe from Ottolenghi and Sami Tamimi’s book “Jerusalem”.  These are very tender cod cakes in tomato sauce. I didn’t add any chili because of the kids, I served it on the side (sriracha my favorite) and it was soooo good. The recipe…

  • Gianduja & Orange Blossom cake by chef Christophe Michalak

    12/08/20204passionfood

When we start eating this cake it’s so hard to stop. The reason is that under its chocolate shell, we have a moist and soft financier cake, the crunchiness fron the caramelized nuts, the fondant of the Gianduja ganache. Everything is there !  Add to that this, a subtle note of orange blossom that I love.  It’s really delicious, like every time I try a recipe from this exceptional chef “Christophe Michalak”. I have already made his other signature “vanilla tonka” cake recipe on my Instagram account, from the same book “the ultimate cake book”.  It was just divine. Without further ado, here is the…
