This strawberry, raspberry and rose sorbet is the perfect summer dessert. It’s very easy to make and super refreshing. You can use any fruits you like, but I chose to combine raspberries and strawberries with a floral touch: rose water.

To make this colorful summer sorbet, you will need an ice cream maker. If you use a machine, prepare it the day before by placing the bowl in the freezer.

As I mentioned earlier, this strawberry, raspberry and rose sorbet is simple to prepare. Just put caster sugar, icing sugar, glucose, and fruit purée in a saucepan over low heat. Stir with a whisk until the sugar completely dissolves. Let it cool before adding the rose water. Then, pour the mixture into the ice cream maker and churn for about twenty minutes before enjoying.

Strawberry, raspberry and rose sorbet.

Ingredients :

  • 400 g raspberry purée
  • 200 g strawberry purée
  • 60 g glucose, liquid
  • 60 g icing sugar
  • 80 g caster sugar
  • 2 tsp rose water

Method :

    If you make your own raspberry and strawberry purees like I do, simply blend the fruits and then strain them to remove the seeds. If you don’t mind the seeds, you can skip this step.

    Next, in a saucepan over low to medium heat, add all the ingredients except the rose water. Stir with a small whisk until the caster sugar completely dissolves and there are no lumps of icing sugar left.

    Remove from the heat and let it cool completely before adding the rose water. Then, pour the mixture into the ice cream maker. Churn for about twenty minutes or until the sorbet firms up.

    Once the sorbet is ready, you can enjoy it right away, otherwise store it in an airtight container and place it in the freezer until you need it.
