{"id":3077,"date":"2022-04-05T14:20:00","date_gmt":"2022-04-05T12:20:00","guid":{"rendered":"https:\/\/4passionfood.com\/en\/?post_type=cuisine-recipe&#038;p=3077"},"modified":"2022-04-08T10:56:14","modified_gmt":"2022-04-08T08:56:14","slug":"almond-briwat-or-moroccan-almond-samosas","status":"publish","type":"cuisine-recipe","link":"https:\/\/4passionfood.com\/en\/recipe\/almond-briwat-or-moroccan-almond-samosas\/","title":{"rendered":"Almond briwats or \u201cMoroccan almond samosas\u201d"},"content":{"rendered":"<div class=\"pntrst_main_before_after\"><\/div>\n<p>When you think about Moroccan cuisine you\u2019ll probably think about <a href=\"https:\/\/en.m.wikipedia.org\/wiki\/Couscous\" target=\"_blank\" rel=\"noreferrer noopener\">couscous<\/a>, <a href=\"https:\/\/4passionfood.com\/en\/search\/Tagine\/?noredirect=en_US\" target=\"_blank\" rel=\"noreferrer noopener\">tagines<\/a> and <a href=\"https:\/\/4passionfood.com\/en\/recipe\/moroccan-chicken-pastilla\/\" target=\"_blank\" rel=\"noreferrer noopener\">chicken pastilla <\/a>which are the most popular.<br>But today, I\u2019m here to talk about briwats (or briouates). These small Moroccan samosas stuffed with sweet or savoury filling, then fried or baked for a lighter version. <\/p>\n\n\n\n<p>There are many varieties to make the savoury briwats, meat with spices, shrimp with chermoula or vegetables. They are most often prepared during the month of Ramadan to accompany harira ( the Moroccan soup). <\/p>\n\n\n\n<p>The sweet version which is the recipe I\u2019m sharing with you today is almond briwats. The filling is made of almond paste, perfectly flavoured with cinnamon, mastic and orange blossom water. Some use raw almonds, some fry the almonds or mix fried and raw almonds. My favourite way is to fry the almonds, you can of course roast them in the oven for a light version.<br>Traditionally the filling is wrapped in a very thin dough called \u201cwarqa\u201d in Morocco, which we also use to make pastilla. Unfortunately there is no warqa in Dubai, but it\u2019s easy to substitute it for spring roll pastry ( it works perfectly).
