For me it brings out summer memories, it\u2019s a dish that brings family and friends together.&nbsp;<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">There are several varieties, the most common are \u00ab&nbsp;paella de marisco&nbsp;\u00bb seafood paella, and \u00ab&nbsp;paella mixta&nbsp;\u00bb mixed paella combines meat, seafood and vegetables. <\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">Some recipes contain chorizo or sausage, if you want to prepare an authentic one and not disappoint the Spanish people, please avoid the chorizo and the sausage.<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">My favourite is seafood, I used prawns, squid, and cooked mussels (I kept the cooking water). To make it as close as possible to what I could eat in Spain, I followed the advices of the Spanish chef \u00ab&nbsp;<a href=\"https:\/\/www.google.com\/url?sa=t&amp;rct=j&amp;q=&amp;esrc=s&amp;source=web&amp;cd=&amp;ved=2ahUKEwiStPuq9bHvAhWLJcAKHRMQB1wQwqsBMAN6BAgFEBo&amp;url=https%3A%2F%2Fwww.youtube.com%2Fwatch%3Fv%3DKoPzblvY8F8&amp;usg=AOvVaw2LF15fb_A7TClrlaXSoQWL\" target=\"_blank\" rel=\"noreferrer noopener\">Omar Allibhoy<\/a>&nbsp;\u00bb. Some said that the word \u00ab&nbsp;Paella&nbsp;\u00bb originates from the Arab word \u00ab&nbsp;Baqiyah&nbsp;\u00bb which means \u00ab&nbsp;leftovers&nbsp;\u00bb. However, the<\/span> <span class=\"has-inline-color has-black-color\">problem with this etymology is that the word paella isn\u2019t attested until 6 centuries<\/span>, <span class=\"has-inline-color has-black-color\">after Moorish Valencia was conquered by Jaume I.<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">\u00ab&nbsp;Paella&nbsp;\u00bb actually refers to the wide, shallow traditional pan used to cook the dish on an open fire. The word paella is from Valencia dialect meaning pan, it\u2019s probably derived from the latin word \u00ab&nbsp;patella&nbsp;\u00bb for pan.<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">As a dish it may have ancient roots, but the modern paella was created until the mid-nineteenth century, in an area around the \u00ab&nbsp;Albufera&nbsp;\u00bb lagoon adjacent to the city of Valencia, on the east coast of Spain. Where fishing and rice dominated the region for centuries.<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">Paella valenciana believed to be the original recipe, and consists of round grain rice as \u00ab&nbsp;bomba rice&nbsp;\u00bb, green beans, rabbit, chicken, sometimes duck and garrof\u00f3 which is a variety of lima or butter bean, all cooked in olive oil and chicken broth. There are several varieties, the most common are \u00ab&nbsp;paella de marisco&nbsp;\u00bb<\/span> <span class=\"has-inline-color has-black-color\">and \u00ab&nbsp;paella mixta&nbsp;\u00bb which<\/span> <span class=\"has-inline-color has-black-color\">combines meat, seafood and vegetables.<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"has-inline-color has-black-color\">The key ingredient<\/span>s <span class=\"has-inline-color has-black-color\">to make paella :<\/span><\/h2>\n\n\n\n<h4 class=\"wp-block-heading\"><span class=\"has-inline-color has-black-color\"><span style=\"text-decoration: underline\">Rice :<\/span><\/span><\/h4>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">The main key ingredient is the rice. You can\u2019t use any rice, it\u2019s important to use a paella rice like \u00ab&nbsp;Bomba rice&nbsp;\u00bb or \u00abcalasparra\u00bb. If not you can use the Italian \u00ab&nbsp;Arborio rice&nbsp;\u00bb, which is the most available. Short grain rice is obviously essential for <font color=\"#757575\"><span>this dis<\/span><\/font>h . But never use long grain rice.<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><span class=\"has-inline-color has-black-color\"><span style=\"text-decoration: underline\">Spices :<\/span><\/span><\/h4>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">The saffron is a fondamental ingredient, which gives the amazing golden color to the rice. Before starting cooking, infuse the saffron in the stock, and set aside until needed. <\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">Other spices are used like, sweet smoked paprika.&nbsp;I added some turmeric to the stock.<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><span class=\"has-inline-color has-black-color\"><span style=\"text-decoration: underline\">Stock or broth :<\/span><\/span><\/h4>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">If you<\/span> <span class=\"has-inline-color has-black-color\">are making a meat based paella use a chicken stock, and if you go for a seafood one use a fish stock ( you can use the shellfish to make your stock). The stock is one of the ingredient that can make a big difference.<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">In my case I used a seafood stock and I added to it the cooking water mussels.<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"has-inline-color has-black-color\">How to cook a <\/span>this amazing dish<span class=\"has-inline-color has-black-color\"> ?<\/span><\/h2>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">It\u2019s true that cooking paella is done over an open fire, which adds an exceptional flavor to this emblematic Spanish dish. You still can make it at home without any problem, you can cook it on the stovetop. Use a paella pan if you have one, if not, a stainless steel large skillet or a frying pan can be perfect.&nbsp;<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">Place the pan, on a medium-high heat, add a good amount of extra virgin olive oil, start with the squid, then add the bell pepper, sweet paprika, stir for 2 minutes and add the tomato to avoid the paprika from burning. Cook for about 3 minutes, before adding the rice, stir to make sure that the rice is coated and adsorbed all the flavours.<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">Add the stock, give a stir to be sure that the rice is evenly distributed. <\/span>A<span class=\"has-inline-color has-black-color\">nd once the stock comes to a simmer you don\u2019t touch your rice. You will add the shellfish depending on how long it will take for cooking.<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">A crusty golden layer of roasted rice can be formed on the bottom and sides, called \u00ab&nbsp;socarrat&nbsp;\u00bb in Valencia. This is traditionally considered positive thing and is coveted by true paella lovers who enjoy eating it.<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-black-color\">Once it\u2019s cooked, let it rest for 5 &#8211;
