The &#8220;za&#8217;atar&#8221; in English means thyme, but the Za&#8217;atar &#8220;ME blend&#8221; varies from region to region, and each family has its own recipe. It is broadly composed of thyme, oregano, sumac, sesame seeds, cumin and coriander.
